The other day on my way home from work my car completely blew a spark plug and broke the ignition coil. I just got it back from the repair shop today. They rethreaded the hole and put a new coil on. It drives normally on flat ground. But once I hit a hill it lost all power and there was a slight shake, telling me to service the stabilitrac and flashing check engine light. When it threw the plug could it have damaged a fuel injector possibly, or could that be indicative of damage to the cylinder head?

Sounds like it's still misfiring. I would first suspect the repair done but it could be a whole host of stuff. You won't know until someone looks at it.
